Last Week of School Menu!

Last Week of School Food Fest Menu

Woohoo, last week of school is here.  I welcome the easier, more relaxed schedule.  Even though my work hours stay the same, the carpooling, kid juggling, homework managing jobs are put on cruise control.  Add in extra time to play with kidlets, vacations, being out in nature more often, stocking up on Vitamin D, and I am one happy camper!

We are having a Popsicle party to celebrate Summer season, so will be stocking up on Dreyer's Outshine bars - if a Popsicle can be beautiful, these are them - Bright natural color, good solid fruity flavor - These will be on our summer staple list for sure!

Last week, I lived on carbs because guess what - didn't plan my week out.  We have 3 pasta dinners this week, so I'm guessing I'm trying to continue this trend.  However, I'm hoping to limit the gluten/wheat to these meals only, so the 'wheat effects'  aka Bloat-ville will be a bit under control before the swimsuit gets broken out!  I also want to bring back my veggie-love to get some good energy back too!

WEEK OF MEALS:

  • Favorite - Planning for upcoming vacation, camps, camping & BBQ's!
PREP DAY - 
  • Clean & Chop weekly veggie picks - Carrots, broccoli, bell peppers, Mushrooms - Chop for snacks and no-whining before dinner bowl, as well as any other veggies needed for the week.  (Except onions... only chop your onions before making a meal..some weird fact about  onions will absorb toxins from plastic storage/air around - best to chop fresh!)
  • BBQ 4 Chicken breast halves with skin (Olive Oil, sea salt, bbq until lovely) - Chop after cooled - Using for dinners during the week. Using in jar salads & asian salad.
  • Quinoa  - Cook 2 cups of  quinoa (bulk @ Winco) in chicken or veggie broth.   - Use it in jar salads, heat up for breakfast.. .eat with salsa & fried or hardboiled egg / or chop up an avocado with fried egg & quinoa... 
  • Dressing - Balsamic maple glaze
  • Jar Salad- Mexican Jar Salad - Makes about 4 quart mason jars - The super secret trick is to put the heartiest stuff close to the dressing, and the stuff that can wilt up at top away from dressing. 

RECIPES & NOTES (alphabetically listed)

Asparagus - 
Turn oven to 400 degrees - 
- Rinse and trim your asparagus (bend asparagus in half gently, the thick bottom will break off naturally, and your asparagus is now trimmed).   
- Lay asparagus out without overlapping, drizzle with olive oil over the top, season all with sea salt, then toss with hands, so all the spears are nicely coated.
- Cook for about 10 minutes. - Stirring 1x so that one side doesn't cook too much.
Meanwhile - toast your pecans in a saute pan on stove over medium... turning frequently - watch and remove once they have a great toasty scent wafting up.

Remove from oven, put on plate/platter, drizzle with balsamic maple vinaigrette, top with toasted pecans.

Balsamic Maple Vinaigrette (Eat Like a Farm Girl)
This will make a good-size batch, and lasts for a couple of weeks in the fridge.  I use this on my egg and quinoa breakfast, and pretty much everything else!

  • 1/3 cup balsamic vinegar
  • 3 T maple syrup
  • 1 T Dijon Mustard
  • 1/2 tsp minced garlic (I always do 2 cloves)
  • S&P
  • 1/2 cup EVOO

Blend/Emulsify/or whisk with your fork until it is a creamy consistency!


Mexican Jar Salad - 
  • green peas, corn, black beans, onion, tomato, avocado, cilantro, and fresh lime juice with romaine.. topping it with crushed tortilla chips too!
  • Creamy Cilantro Dressing
Spaghetti with Meatballs Crockpot - 

This is my plan:
  • Throw meatballs in crockpot (Italian frozen)
  • Chopped Onion
  • 2-3 cloves garlic
  • Mushrooms
  • Italian seasoning
  • 1 can hunts spaghetti sauce 

Put on low all day, cook pasta & eat!

May Menu 2


Week of May 19th Menu (really need to come up with better titles)

Happy Is this month of May ever going to turn into June?!

Not sure what happened to the cinco de mayo week post, but part of it has been deleted - bahh, gasp - oh well.  Moving on...  Did anyone check out my favorite sites and snacks pages on the blog?  Do you have any good, easy, healthy snack ideas to share?

Years ago, Mike asked for a juicer, he received, and there it sat for probably 10 years.  Along comes Joe the Reboot guy, and now the juicer is in action.  I also have a FB friend that has lost about 50lbs juicing - How great is that?!?!, and what great motivation to get a little more juice in our diet.

So, this week Mike and I are juicing daily with a simple 1 bunch of kale and 1 apple recipe per person.  It has a pretty mild flavor,  it's not Odwalla, but wow - getting a whole bunch (literally) of kale in before 8am - I feel like a winner already ;-).  We ask the girls to have a small drink (2 tbsp) to hopefully get their palate used to it, and then when I offer them a juice with extra fruit, perhaps they'll go for it.. wa-ha-ha-haaa.  I'm not sure where we're storing all this kale, but feel free to let me know if I start taking on a strange hue of green by the end of the week. 

Final update - Going to be sure to post all needed ingredients, as when I look back on this a year from now, I'm pretty sure my pantry might be a bit different from today!

RECIPES & NOTES (alphabetically listed)

 

 Asian Chicken Salad  (Adding the chicken to this recipe)

This is a great salad, that is super easy because you can get chopped cabbage ready to go. Add in already chopped veggies from Sunday, and bam - it's done.  

 All of the ingredients for the dressing are staples in my pantry - Rice Wine Vinegar, Sesame Oil, jarred or fresh ginger, honey & Soy.  I go through asian cooking marathons, where the majority of what we're eating has these ingredients, and because I always have them around it makes it much easier to make those meals.

Balsamic Mushroom Sauteed Pork Chops - Concoction disclaimer :)
4 boneless pork chops
8 oz mushrooms
1 sliced onion
2 tbsp olive oil
1/4 cup balsamic vinegar
1 cup uncooked rice.

Cook your rice according to directions.  While rice is cooking, heat oil in skillet on medium high.  Add pork chops and sear for 3-4 minutes each side (get a good brown cripyness on each side - this seals in the juices).  Remove pork chops & add onions & mushrooms to  the skillet.  Reduce heat to medium & cook until they smell fabulous & onions are translucent.  Add balsamic vinegar (watch out, strong smell when initially adding), cook out 'vinegary-ness' for a few minutes, stirring frequently.  Add pork chops  back in - Spoon the balsamic/onion/mushroom yummyness on top to baste the chops while they cook through - another 10 minutes or so... watch your chops so you don't overcook them - I usually use a thermometer here.  Place on top of rice (or on the side if your kids are non-mixers like mine).

Beet,Goat cheese, spinach Salad -  Jar Salad - Makes about 4-5 quart mason jars - The super secret trick is to put the heartiest stuff close to the dressing, and the stuff that can wilt up at top away from dressing. 
  • Spinach & Kale -Chopped
  • 1/2 bag frozen edamame
  • Chop Red Onion
  • Can Pickled Beets
  • Goat Cheese - Crumbled
  • Pecans
  • Chopped Chicken (grilled above)
  • Directions -
    • 3 tbsp dressing in bottom of quart jar
    • Add sliced red onions
    • Add edamame & beets
    • Add some cooked quinoa!
    • Add goat cheese
    • Add chopped chicken
    • Add spinach & kale
    • Add pecans
Chicken Noodle Soup8 cups chicken broth
4 cups water
BBQ'd chopped chicken
Chopped carrots
Chopped celery
Slice an onion
3 cloves garlic
Cooked egg noodles
Italian Seasoning
Italian flat leaf parsley
*update - 4 cups of additional water & chicken boullion (winco has a great boullion that has no MSG, which is hard to find anywhere else!
- Put olive oil in stock pot, heat to medium add onion & garlic - cook until softened. 
- Add chopped chicken, carrots & celery - cook for about 5-10 minutes.  *Add Italian Seasoning & SALT
- Add chicken broth - heat to boiling, then back off to medium low to simmer for as long as you like.
- Add cooked egg noodles, check if you need more salt/seasoning - heat for like 2 minutes, then serve, or you'll have a starchy mush soup - been there, done that about 5x - Seriously.

Garbanzo Throw Together Salads-
Avocados & garbanzo beans are staples in our kitchen, and as long as you have an acid (lime juice, lemon, vinegar) to throw with it... the possibilities are endless.  Depending on what I have on hand, I typically go either mexican, italian or asian inspired.  Here are my throw-together combos - pick any of these - although pay attention if you are going one ethnic way or not... kind of funky to have corn in with an asian style :-)

Mexican -
  • Garbanzno
  • Avocado
  • Red onion (make these big, so your kids or let's face it YOU can take out before giving to them)
  • Frozen corn (yes, I just throw it in frozen, it thaws in a couple of minutes)
  • Cilantro
  • Lime juice
  • Sea Salt
  • Dash of olive oil

Asian -
  • Garbanzo
  • Avocado
  • Frozen edamame shelled (yes I just throw it in frozen, it thaws in a couple of minutes)
  • Shredded carrots
  • Cilantro
  • Lime juice
  • Dash of sesame or canola/veggie oil

Italian -
  • Garbanzo
  • Avocado
  • Basil
  • Grape tomatoes cut in 1/2
  • Red onion
  • Red wine vinegar
  • Dash of olive oil
Garbanzo Note - I've started to buy dried garbanzos in the bulk section, but don't have it in my regular routine to do the soaking,cooking,storing bit - so I buy canned and alternate depending if I have stored beans - but that is an option, if you love chickpeas as much as I do!

Kale & Brussel Sprout Salad - Shout out to long-time family-friend Sally :)
4 – cups roughly chopped lacinato kale (one bunch)
8 large (raw) brussel sprouts, sliced very very thin
1/3 cup roughly chopped almonds
3 heaping tablespoons freshly grated parmesan cheese
2 Tbsp olive oil
1 Tbsp red wine vinegar
2 squeezes of honey
Salt & pepper to taste
 
Directions:
 
Preheat the oven to 350 degrees
Place the chopped almonds on a piece of tin foil and place in the oven to toast.  Check after four minutes – they burn quickly and you want them just golden brown.  When toasted, remove almonds from the oven and let cool.  Toss together the chopped kale and shaved brussel sprouts together in a large bowl.  Add the chopped almonds and the cheese and toss again.  To make the dressing, combine the olive oil, vinegar, honey and a pinch of salt and pepper in a small bowl.  Drizzle the dressing over the salad and mix well.  Eat immediately or keep salad up to five days in the fridge.
 
The nice thing about this recipe is it gets better the longer it sits – up to 5 days.

Salmon & Pea Fettucine
A note about converting to a dairy free recipe.
Because I'm dairy free, when a creamy carb-loaded recipe calls my name, I simply convert to using plain almond milk, or toffutti cream cheese / sour cream & it tastes great!  I tried this on beef stroganoff, and it rocked my world (I was also going through serious cheese and cream withdrawals at the time!).

Seriously though, it's nice to know that you can still have a warm & comforting meal without the heavy dairy - YAY!  Now if you love dairy and dairy loves you - then by all means, dairy it up with this!

Week of May 5th - Cinco De Mayo

Grill-Happy Week of May 5th

Ayiyiyiyi - Cinco De Mayo!  Hope everyone has a great time celebrating.  The weather has officially started warming me up to lighter, get it out on the grill fare.  Since I just had someone at our house this week to repair the window that was broken when I caught the house on fire while grilling last year - I say game on!

What do you think of my 'Hmm, I think I need a break from work' logo I made?  I'm obsessed with a site www.pixlr.com - It's just like Photoshop, but free, and online... Ok, I just geeked out there - but really - I like the word Nourish - kind of my motto for life really, and the colors Gray & of course green :-) .  To geek out just a bit further... I'm aware the logo doesn't go with this design/background thing that's going on..  maybe I'll see about updating the template this week.

I've also added a couple of 'pages' to this blog, - favorite snacks, and websites.... Maybe wait a week to peek at these, as I'm just starting lists that I'll add to as time goes on.  These will help me (hopefully) remember different ideas & resources that I may have forgotten about... maybe a couple good ideas for y'all as well.  If you have a great snack idea or site that you love, post a comment & share the knowledge people lol ;)

Week of April 28th Menu, Prep, Grocery List - Veggie Inundation Style...

 
Ok... this is going to happen probably all of 1 time - because this just took the whole morning lol! 

But I do usually plan recipes and do prep steps on the weekend, to make the week-days easier and more manageable.  Also, perhaps by logging them here, I may be able to come back and actually  just pick a week and go. (Wishful thinking)  Add to the fact, that I love food... reading about it, talking about it, pinning it,  eating it... might as well write about it too? (jury is still out... I do write most of this out, but wowo talk about time investment for the whole thing..)

Anyhoo, here is a look into what we do on a weekly basis that helps with time management, healthy eating, less eating out $$, and trying new foods & recipes!  When I ask my girls what their favorite things to eat are, they're not sure... because it's rare that I repeat them - I've been working on that (see above). I'd like them to remember some favorites dishes from their childhood!


Week of April 28th
Operation Inundate with Vegetables... Rather than focusing on taking away things that aren't as healthy, I'm continuing the mission this week as well to focus on simply eating more vegetables and whole grains, and naturally edging out those filler foods for an upgrade to our healthy eating.

  • Favorite book of the week - free kindle download - Eat like a farm girl..maple balsamic dressing - omg I poured this on everything I ate last week. (no joke) 
SUNDAY PREP -  (Hmm it's 11:30am, guess I should get busy!) 
  • Clean & Chop weekly veggie picks - Carrots, broccoli, bell peppers (xtra prep step, dice carrots for chicken noodle & shepherd's pie).  Use for lunches, snacks, pre-dinner whining prevention snack
  • BBQ 2-4 Chicken breast halves with skin (Olive Oil, sea salt, bbq until lovely) - Chop after cooled - Using for soup and lunches during the week.
  • Chop root veggies - Carrots, Beets, Potatoes, Red Onion, Sweet Potatoes - Enough for Sunday Night, as well as extra for heating up and eating throughout the week.
  • Egg Noodles - Boil large pot of water - Cook whole package (or 2) for Sunday Soup, and butter noodle night.
  • If still on a roll make zesty 3 bean salad, otherwise get out of the kitchen!

SUNDAY SOUP NIGHT -
  • Chicken Noodle -
8 cups chicken broth
BBQ'd chopped chicken
Chopped carrots
Chopped celery
Slice an onion
3 cloves garlic

Italian flat leaf parsley
*update - 4 cups of additional water & chicken boullion (winco has a great boullion that has no MSG, which is hard to find anywhere else!
 
- Put olive oil in stock pot, heat to medium add onion & garlic - cook until softened. 
- Add chopped chicken, carrots & celery - cook for about 5-10 minutes.  *Add Italian Seasoning & SALT
- Add chicken broth - heat to boiling, then back off to medium low to simmer for as long as you like.
- Add cooked egg noodles, check if you need more salt/seasoning - heat for like 2 minutes, then serve, or you'll have a starch mush soup - been there, done that about 5x - Seriously.
 
  • Roasted Veggies (This is something I make often - everyone eats their favorite roots and ignore the ones they don't like...) *Ina Garten recipe.. I <3 Ina 
400 degree oven - Peel, and chop roots into big chunky pieces.  Drizze generously with olive oil and toss to coat.  Add sea salt - toss to coat.  Cook for about an hour - Check occasionaly & stir... poke with a fork for done-ness - GOOD STUFF.  Heats up well as snack/side for any meal during the week.
Prep - Make extra onions and potatoes - potatoes for shepherd pie & onions for Ham puffs

MONDAY -
  • Healthy Shepherd's Pie -
3-4 cups Smashed Potatoes
1 cup diced  fresh carrots
1 cupFrozen Peas
1 cup Sliced Mushrooms
3 cloves Garlic
1 cup Chopped Kale
1 Onion
1 lb organic Ground beef
1 - 2 cups Veggie broth
Optional - shredded cheddar or nutritional yeast... even a little red wine might be good in the saute-ing step if you want to get all fancy like that.
 
Directions -
Water and peeled potates to a boil, cook, drain.. smash with large spoon/fork, or mash it!  Mix in nutritional yeast for a 'cheesy' flavor.
Saute Beef, garlic, onion wedges in olive oil.
Add rest of veggies for a quick saute, not too mushy!
Add in some vegetable broth to get some good moisture
Pour into baking dish (whatever will fit best - pie plate, 9x9 square baker)
Top with smashed/mashed potatoes
Cover 3/4 of the pie with 1 cup shredded cheddar, the other 1/4 with some nutritional yeast
Bake 350 for 30 minutes - wa.la -

 - Healthy, casual recipe that's a good throw it in, cook it & call it good (ie; it's not a souffle people - easy peazy)
- It's even easier if you cook the mashed potatoes for another meal, double it up and save some for this meal.

TUESDAY -
  • Filet of salmon - season with dried or fresh dill, butter/fake butter, sea salt, and layer on top with lemon slices.  Bake @ 350 until done (about 30 min)
  • Israeli couscous - Cook from TJ's - Or make a rice pilaf etc...
  • Zesty 3 bean - Excited to try this (new recipe disclaimer)

THURSDAY - *Disclaimer.. have made variations, but this is new - I've used pie crust with this before, but wanted to try puff pastry because - HELLO it's puff pastry)

Ham Puffs
1 package puff pastry (Put in fridge to thaw in the morning!)
Prepared Ham cubes - Look for the kind that are 'preservative/nitrate free' - a little bit healthier ham
Cheddar cheese - Sharp if you want to get fancy, otherwise medium cheddar it up
1 cup Chopped Kale - Loving that some stores now have bags of chopped, clean kale - thank you!
Onions (from roasted roots)
Dijon Mustard

Lay out the 2 sheets of puff pastry, roll it a bit ... if you want?!
Cut with pizza cutter into 8 equal square/rectangles
Spread dijon on both sheets,
On 1 sheet - add ham, cheddar, (..or don't my dairy free people), cooked onions, chopped kale. Season with salt, place other sheet squares on top of the layered ones (does this make sense?), and then seal them together with a fork - so fancy on a Thursday lol.
xtra step - which I will not be doing - egg white wash - couple egg whites in a bowl, baste on top for pretty-brown appearance - woowoo :)
Bake at 400 for about 15-20 minutes (not sure about this - read puff box directions, and watch these so they don't burn - that would be sad.
 
INSERT VEGGIE - Whatcha got in that fridge - Use it before it goes bad!!  Slice some bell peppers for an easy option.

FRIDAY -
  • Crock it and Cocktail - Whoop it's Friday, throw it in in the morning, make some rice after work - call it good!
 
  • Baked Corn Tortilla strips - 350
Stack 5 corn tortillas at a time, use pizza cutter to make strips - not too skinny!  Do a couple of stacks, and place on baking sheet.
Use spray olive oil to get them sticky, so that when you sprinkle with salt - it sticks. kind of mix them around - it's ok if some overlap, but in general - let's not do that.
Throw in oven - and watch them - usually done in about 10 minutes - brown, cruncy, but not dark brown - have burnt multiple times to figure out I need to camp at the oven for these ;-).
I usually make a few batches - they're healthy, addicting and should go good with this dinner on the side or on top for foo foo garnish.
