Healthy, Quick, Budget friendly Dinner List - In That Order


Keep it Quick, Keep It Healthy & Keep It Quick Dinner List


Is this too much to ask?  I just want a nice little list to refer to when my brain doesn't want to think about what to make, I want/need to keep within my grocery budget, and I don't have the time to spend an hour making a meal.

I will update this as I find secret meals that meet this trifecta!  Most are just  going to be listed out, no recipe necessary, or if need some instruction will link to the recipe.

  • Red Beans and Rice w/ bagged salad
  • BBQ Chicken drumsticks and grilled asparagus/green beans
  • Fish Packets Night - Individual fish filets, place each on a large square of parchment paper.  Wrap it up into a packet & bake at 375 for 30 minutes. Everyone LOVES opening their packets on their plates.  See Trader Joe's list for their freezer rice
    • Asian style: 
      • Sauce (teriyaki, hoisin, even just soy sauce will work)
      • Bell peppers, spinach, onions, mushrooms
    • Dill/Lemon:
      • Pats of butter, sprinkle with dill, minced garlic & sliced lemons.
  • Easy Nutty Chicken - We always have tenders or breasts in the freezer. This is pretty simple... 
    • Dip - Dip the chicken in 1 of the following:
      • Dijon
      • Honey Mustard
      • Mayo (yep it's a little fatty)
    • Coat in one of the following that have been ground up (hint - your kids will love smashing the nuts).  Mix in chopped parsley for a good color mix)
      • Walnuts
      • Hazelnuts
      • Pecans
    •  Remember to season.


Go-To Freezer Meals

Want to ensure that you don't jump to takeout when you're in a moment of cooking hatred (is that too strong? I think not.)  Keep some  of these on-hand for your "Let's pretend I'm not cooking right now, because I DO NOT want to cook meals.

  • TJ's Frozen Orange Chicken and Instant Brown Rice, with Edamame (keep in the pod for fun, interactive eating for the kids)
